Neil Perry's Rockpool restaurant in Sydney was founded in 1989 on the philosophy of using the finest, freshest produce to create wonderful food.
For the Melbourne incarnation, Bates Smart's brief was to create a great produce experience, drawing on a fusion of the Rockpool ethos and a classic North American steakhouse. Reference was also made to the grand brasseries of Paris, such as La Coupole and Le Dome.
Guests enter the restaurant through the Produce Hall, where food items are stored and prepared, and which provides glimpses of the chef's vestibule and kitchen area. They are greeted in the cellar bar, where light meals and drinks are served, or in the adjacent casual dining area. The spectacle of arriving in the formal dining room - with its sweeping views over the city skyline - is heralded by passing through a specially designed rope curtain.
At the heart of the space, and viewed from all areas, is the substantial display kitchen defined by a monumental beaten copper canopy. Throughout the restaurant there is a strong use of robust materials, in particular the extensive use of oiled or waxed solid timbers. All furnishings, decorative light fittings, joinery and carpets were custom designed for the project.
